This Festive Bikini – A Recipe

WHere is a home-style take on a beverage featured on a new cocktail list. It's a batch prepared mix that is bursting with the essence of a Christmas time, rendering it excellent for your celebration. Save the extra citrus syrup you can use for breakfast cocktails, puddings, or for another batch of the drink.

Bikini

Serves 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (makes 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Place all the components into a pan, heat until it reaches a gentle boil, agitating to dissolve. Next, take off the heat allowing it to cool entirely. Pour to a clean bottle, seal keeping it in the fridge, it can be stored for up to four weeks.

For the Premix: Combine all the liquids into one large bottle, let it rest for one hour, then pass it through preferably using muslin, to ensure it's completely strained.

When ready to serve: Pour 85ml of the batch mix into your stirring glass containing ice, and stir gently for about 60 seconds to cool it down. Strain into an frosted cocktail glass or equivalent, garnish with some cranberries and finish by giving it a light spray with the mandarin essence over the top.
